Award Winning BBQ Pork

Place pork ham in cooker until done, usually when joints break loose easily. As soon as the ham is cooled enough, begin to separate the meat from the bones. The meat should come apart with little effort. Remove the skin, fat and gristle from the meat. Then shred the pieces of ham to the size of your little finger. Next, place the meat in an aluminum baking pan and pour Mrs. Griffin’s BBQ sauce (hot, regular or hickory smoked) liberally over meat and mix in until the meat is saturated. Sprinkle water over the meat to keep it moist. Cover pan with aluminum foil and poke holes in the top for ventilation. Place in a smoker for 30 – 45 minutes. Enjoy!
